Ground beef (80/20 blend, rolled into cold balls) Salt and pepper Potato buns (and lettuce for wrapping) Sharp cheddar cheese Sweet onions (sliced paper-thin) High-smoke-point oil (avocado or grapeseed)

Preheat the electric griddle to high heat (about 400°F). Slice the sweet onions paper-thin using the mandoline slicer. Lightly coat the griddle with the high-smoke-point oil. Place the cold beef balls on the griddle and firmly smash them flat. Season with salt and pepper, and top with the paper-thin sweet onion slices. Cook until the edges are dark and crispy (about 2-3 minutes). Flip the patties, add the sharp cheddar cheese, and cook until melted (about 1 minute). Serve the patties on the potato buns or wrap them in the lettuce.
