Oklahoma Onion Smash Burgers

Crispy smash burgers cooked on an electric griddle.

  1. Preheat the electric griddle to high heat (about 400°F).
  2. Slice the sweet onions paper-thin using the mandoline slicer.
  3. Lightly coat the griddle with the high-smoke-point oil.
  4. Place the cold beef balls on the griddle and firmly smash them flat.
  5. Season with salt and pepper, and top with the paper-thin sweet onion slices.
  6. Cook until the edges are dark and crispy (about 2-3 minutes).
  7. Flip the patties, add the sharp cheddar cheese, and cook until melted (about 1 minute).
  8. Serve the patties on the potato buns or wrap them in the lettuce.
